Snickers Cake
Now this Chocolate & Peanut Butter Protein Cake has a place in my heart. My go to recipe when craving snickers!

Ingredients
- 40g Powdered Peanut Butter (PB2 Etc)
- 60g Protein Powder (chocolate, vanilla, PB)
- 20G Coconut Flour
- 150g Unsweetened Apple Sauce
- 1/2 Teaspoon Caramel/Vanilla Extract
- 60ml (2) Egg Whites
- 1/2 Teaspoon Baking Powder
- 5g Granulated Sweetener
- Icing: 15g Cacao Powder
- Optional: Crushed peanuts (calorie content not included in recipe)
Instructions
- Preheat Oven to 350° f / 180° c / Gas Mark 4. Line an 8 inch round cake tine with greaseproof paper.
- In a small bowl combine applesauce, granulated stevia, baking powder and your chosen extract. Set aside. (mixture will froth, this is normal)
- In another bowl mix together the powdered peanut butter, protein powder, and coconut flour. Add the liquid egg whites followed by the applesauce mixture. Mix until thoroughly combined.
- Pour mixture into prepared cake tin and bake on the middle shelf for 20-25 minutes until risen and the cake springs back when touched with a finger in the center .
- Allow to cool in the tin for 5 minutes then turn out onto a cooling rack to cool fully.
- Combine cacao powder with a little water to create an slightly runny icing. Poke holes over the top of the cooled cake with a fork or cocktail stick then pour over cacao mixture.
- Allow cake to absorb ‘icing’.
- Cut into 8ths.
